Ricotta Gnocchi ✨ These ricotta gnocchi are easier and lighter than traditional potato gnocchi and come together in under 30 minutes. Ingredients: • 250g (1 cup) strained ricotta • 2 egg yolks • 55g (2 oz / about 1 cup) finely grated parm • zest of 1 lemon • 1 tsp salt + pepper • 65–75g (1/2 + 2 tbsp) 00 flour Method: 1. Line a strainer with paper towel and add ricotta. Let drain for 5–10 minutes, then gently press out any excess liquid. 2. Gently mix ricotta, egg yolks, parm, lemon zest, salt, and pepper. 3. Add 65g (1/2 cup) flour and gently fold until just incorporated. 4. Turn onto a floured surface, divide in two, and gently roll into ropes. Add 1–2 more tbsp flour as needed to bring the dough together. It should still look slightly shaggy and soft — don’t aim for a smooth, cohesive dough. Divide the dough into 4, and then roll into roughly 1-inch thick logs. Cut into 1-inch pillow-shaped pieces and place on a floured sheet tray. 5. Freeze for 10 minutes. 6. Boil in salted water until they float, about 1.5-2 minutes. Finish: Transfer directly to a pan with butter and your favourite summer vegetables or aromatics. Add a splash of pasta water, parmesan, lemon juice, and a knob of butter until glossy and creamy. Don’t be shy with the pasta water — it always takes more than you think!
