@chlo_fitx: Nando’s style chicken & rice salad bowl 🥗 The summer meals are rolling out when the sun shines 🌞 Recipe for 2: 300 g Chicken breast 1 pack Mexican rice 1/2 pack Nandos medium rub 30 g Sweet chilli jam 30 g Nandos perinase 30 g Lettuce 40 g Cucumber 1/4 Red onion 50 g Tomatoes 8 g Parmesan 50 g Sweetcorn Step 1 Dice the chicken into thick chunks, season with the Nando’s rub, and air fry until cooked for around 13-15 minutes. Step 2 Prep the salad by washing and cutting the lettuce, and cutting the cucumber, red onion, and tomatoes. Step 3 Microwave or stir fry the rice to cook as per packet instructions. Step 4 Serve in a bowl: add the salad and sweetcorn, top with the rice, cooked chicken, Nando’s Perinaise, and chilli jam. Grate over the Parmesan cheese.
