@ed.cudlipp: In Tolosa, outside San Sebastián, Casa Julian has quietly been cooking exquisite beef since the 1950s. They specialise in old cow, ex dairy, well aged beef. The cows are hand picked, only ribs (chuleton) are served (bone in), and it comes rare with no choice. I like this. Good products should not be wasted because of misguided preferences. This is my 3rd visit in 7 years. In recent years Casa Julian has become very well known - TV programmes featured it, influencers got hold of it, and I was slightly worried this would change the vibe. It has and it hasn’t; it’s become slightly more refined (white table clothes, impeccable service, more complex accompanying dishes), but this is no bad thing. The original character is complimented, not competed with. The beef is extremely good. The other dishes are very good, and so is the wine list. The price is fair. It’s €100/kg for the beef, which in the context of steak, is a very fair price for the quality of the product. At Hawksmoor you’ll pay £130/kg.
