I am a pastry chef, I work with real and compound chocolate. There is a definitely big difference in taste, let's not kid ourselves 😁. You can use real chocolate for all of this, only you have to temper it and it requires time and knowledge. I bought small temper machine and whenever possible, I use real chocolate for dipping.

Ghirardelli is literally not chocolate either so people cannot be comparing almond back to that on the package literally says vanilla, flavored melting something nowhere it says chocolate

as a fellow baker, i think people meant for you to fully melt the 'chocolate' then add the rest! the heat will melt the rest of the 'chocolate', it's the method i use when tempering real chocolate it's called seeding! i don't think it has any actual benefits when not tempering though:)
