Cheesy Mozzarella Potato Sticks 🧀 Crispy but super soft and cheesy on the inside. 📖 Ingredients: Potato Sticks * 8 medium potatoes, peeled * 1 tsp salt (plus more for boiling water) * 2 tsp chicken bouillon powder * 2 tsp onion powder * 2 tsp garlic powder * 1 tsp smoked paprika * 2 eggs * 2 cups shredded mozzarella cheese * ¾ cup grated Parmesan cheese Coating * 1 cup plain flour * 2 eggs, beaten * 2 cups breadcrumbs or crushed cornflakes Spicy Mayo Sauce * ½ cup mayonnaise * 1 tbsp sriracha * ½ tsp smoked paprika * ½ tsp garlic powder * ½ tsp dried parsley 👩🏻🍳 Instructions 1. Boil the potatoes in salted water until soft. Drain well and mash until smooth. 2. Mix in the salt, chicken bouillon, onion powder, garlic powder, smoked paprika, eggs, mozzarella, and Parmesan until fully combined. 3. Line a tray or baking dish with parchment paper. Spread the potato mixture evenly to about 1.5 cm thickness. 4. Chill for 20–30 minutes, then cut into rectangular sticks. Freeze for 1 hour, or until firm. 5. Coat each stick in flour, then beaten egg, then breadcrumbs or crushed cornflakes. 6. Deep-fry in hot oil at 180°C (350°F) until golden brown and crispy. 7.
