@sarah.kinnaird: Slow cooker Massaman beef curry for dinner tonight and it was SO good. Served ours with rice and even the kids asked for seconds INGREDIENTS • 800g beef, cubed • 1 large onion, chopped • 2 large potatoes, chopped • 1 carrot, chopped • 1 x 400mL can coconut milk • 1 x jar of massaman paste • 1 tbsp of brown sugar • 2 tsp of fish sauce • 1/2 cup chopped unsalted peanuts • Rice + fresh coriander to serve 🍚 METHOD 1. Add the onion, potato and carrot to the slow cooker. 2. Pour in the coconut milk and add the recipe base, then stir everything together. Add the brown sugar, fish sauce and mix. Pop the steak on top and add in the kaffir like leaves. 3. Cook for 4 hours on HIGH or 8 hours on LOW until the beef is tender. 4.
