How hungry can a man get? High on a Romanian mountainside, where sheep outnumber people and smoke drifts through spruce trees, there’s a kind of cooking that has no patience for delicate appetites. A real bulz starts with coarse yellow polenta beaten hard in cast iron until it tightens like bread dough. Inside goes burduf cheese, fermented in fir bark, salty and sharp enough to bite back. Then it hits scorching iron until the crust blackens and cracks open, spilling molten cheese into the fire with that savage smell of burnt milk fat and cornmeal. Beside it, the ceaun works slowly. Yet somewhere between the burnt crust of the bulz and that rich mutton dripping down your hands, you remember what hunger is supposed to feel like.
