Melt the white chocolate over a double boiler until smooth. Divide into small bowls and tint each with gel food coloring. 2. Transfer the colored chocolate into piping bags and pipe thin, straight lines (about ¼ inch thick) onto a parchment-lined tray. These will form the “pencil cores.” Refrigerate until completely firm. 3. In a medium bowl, whisk together the flour, powdered sugar, and salt. Add the melted butter and egg white and mix until smooth. Chill the batter for 15 minutes to allow it to thicken slightly. 4. Heat a flat griddle or large nonstick pan over medium heat. Spoon a small amount of batter onto the surface and spread it thinly into a small rectangle using the back of a spoon or an offset spatula. 5. This step ensures the wafer is thin enough to roll without cracking. 6. Cook for 2–3 minutes until lightly golden around the edges. Flip and cook an additional 20–30 seconds. Remove from heat while still pliable. 7. Immediately trim the edges to form a neat rectangle. Place one chocolate core along one long edge and carefully roll the warm wafer around it to form the “wooden” pencil body. Press gently to seal. 8.
