@alexskitchenbangers: Hot Honey Mexicana Taco Baked Burritos Tortillas packed with smoky taco beef, rolled up and baked with melted Mexicana cheese and brushed with hot honey. Quick, easy and absolutely banging 😮‍💨 You’ll find loads more quick & easy dinners in my cookbooks Low-cal Kitchen Bangers in my bio 💕 Ingredients (serves 4): 500g lean beef mince 1 red pepper diced  1 onion diced  1 ½ tsp smoked paprika 2 tbsp taco seasoning  2 tbsp tomato purée 80-100ml water 4 large tortillas 50g Mexicana cheese 30g mozzarella grated  20g honey  ½ tsp mild chilli flakes  1 tsp hot sauce (optional)  2 sprigs of fresh coriander chopped  10g tortilla chips finely crushed  💕Fry the beef mince in a pan over medium heat until browned, breaking it up as it cooks. 💕Add the diced onion and red pepper and cook until softened. 💕Stir through the smoked paprika, taco seasoning and tomato purée and cook for 1 minute. 💕Pour in the water, stir well and leave to simmer for a few minutes until thickened 💕Warm the tortillas slightly so they’re easier to roll. Divide the taco beef between the tortillas, then roll tightly into burritos and place seam-side down in a baking tray. 💕Sprinkle over the cheese. 💕Bake at 200°C (fan) for 10-12 minutes until the cheese is melted and the edges are slightly crispy. 💕Mix together the honey, chilli flakes and hot sauce in a small bowl. 💕Once the burritos are out of the oven, brush the hot honey glaze over the top. 💕Finish with the crushed tortilla chips and a sprinkle of fresh coriander.
