A light, airy bite with the right amount of chocolate taste + sweetness and the perfect crunch. Which is insane because it’s made with hero ingredients like sweet potato & tigernut flour which add some sweetness with only a small amount of organic coconut sugar. For the ganache I brought in some greek yogurt instead of heavy cream. And for the base, it was cottage cheese to the rescue! INGREDIENTS: CAKE: 8oz cottage cheese 2 eggs 4 tbsp powdered monkfruit (or any powdered sweetner) 3 tbsp cacao powder Small splash of vanilla extract Optional but highly recommended: a sprinkle of chocolate chips inside the batter. CHOCOLATE GANACHE LAYER: 1/4 cup melted sugar free chocolate chips 1/2 cup 0% greek yogurt 2 tbsp cacao powder 1.5 tbsp powdered monk fruit Splash of vanilla Optional pinch of espresso and salt CRUNCHY LAYER: 3 servings Simple Mills Sweet Mmms  1 cup sugar free melted chocolate chips Here is how I made it: (Double if you want!) 1️⃣ First, the base: Process cottage cheese with eggs, cacao powder, powdered monk fruit (POWERED is key!), a splash of vanilla extract in a small food process. Transfer to a small oven-safe dish. 2️⃣ Sprinkle some healthier chocolate chips on top, if desired to get you the lava cake feel. 3️⃣ Bake at 350°F for 35 mins. Remove, let cool for 3-4 mins. 4️⃣ For the chocolate ganache, melt chocolate chipos and stir in with greek yogurt, cacao powder, powdered monk fruit, a splash of vanilla. Layer this over the cake. 5️⃣ Grab your Sweet Mmms and crush them up, then mix with 1 cup melted healthier chocolate chips.
