@romania: Had mamaliga? Then you know the smell already. Cornmeal dropped slow into a blackened pot, stirred with the stubborn patience of a man who has split wood since dawn. No butter sculptures, no delicate nonsense. Just water, salt, coarse yellow corn, bubbling like volcanic mud while pork fat spits nearby and sheep cheese sweats on a rough wooden board. Romania survived on this stuff for centuries because it could. Wheat failed, winters bit hard, money vanished, but mamaliga stayed there on the table like an old debt nobody complained about paying. Cut with thread, never rushed, steaming beside garlic river fish, sour cabbage rolls, or a cauldron of hunter’s stew thick with paprika and wine. Then comes the dangerous part. Bulz. A savage little masterpiece born in mountain sheepfolds where shepherds needed calories, salt, and fire more than poetry. Hot mamaliga split open by hand, packed with burduf cheese sharp enough to punch the back of your throat, then buried in embers or thrown onto a scorching grill until the crust chars and the middle collapses into molten lava. Bălmoș goes even deeper into excess. Shepherd food with no interest in moderation. Cornmeal boiled directly in sheep milk, cream, and butter until the spoon nearly stands upright. Smoke, fat, salt, sourness, heat. The beauty of mamaliga is that it never pretended to be elegant. It sits beside bean soup, tripe soup, lamb stew, fried eggs at midnight, or smoked mackerel pulled from Black Sea markets before sunrise. Poor man’s bread. King’s feast. Funeral food. Drunk food. Mountain food. One pot feeding ten people while rain hammers the roof hard enough to silence conversation. And somehow, against all odds, it still tastes honest in a world drowning in decoration.
