A 3-minute walk from Nakano Station South Exit, it serves clear soba made with beef bones and clam broth. Its sister shops include Chuka Soba Rukawa and Yokohama Iekei Ramen Fujimaya. This video features “Beef broth special mazesoba.” It is a soupless noodle dish with rich beef broth, soy sauce tare, beef aroma, and light sweetness. The chewy thick noodles catch the sauce well, bringing out the beef broth flavor. Toppings include chashu, menma, green onion, red onion, nori, naruto, and ajitama. The chashu comes in three kinds: pork shoulder, pork belly, and Japanese chicken breast. The ajitama uses “Maximum Koitamago,” known for its sweetness, richness, and deep yolk flavor.
