You asked for it and here it is, the best chicken curry you will ever make in 30 mins 😮‍💨🤌🏻 gluten free, dairy free & delicious as always. Recipe below.  - 800g free range chicken thigh  - 400ml can coconut milk, I use @ayamaustralia  - 1 tbsp Keens curry powder - Ginger (2-3 tsp) - 2 tsp garlic, minced  - Chicken stock, I used 2 tsp @san_elk chicken stock powder (you could use bone broth instead here) - 2 tbsp tamari, I use @pureharvest  - 2 bay leaves  - Coconut oil - Bok choy, ends removed - Spring onion (about 2-3 stems) - Chilli flakes  - Rice (I used 1.5 cups organic white rice) Rinse rice thoroughly then place into a pot with 1 tsp ginger, 2 ends of a spring onion and cover with chicken stock (about 1cm over rice). Bring to a boil, stir then turn heat to low and cover with a lid. Cook for about 8-10 minutes then remove from heat and let sit for 5 minutes with the lid on.  While the rice is cooking, place the chicken thigh, 1-2 tbsp tamari and 2 tsp garlic into a bowl. Mix to coat chicken.  Pan fry chicken with coconut oil until cooked through. Remove from pan and set aside. In the same pan, heat 1 tbsp coconut oil and add 1 tbsp Keens curry powder. Mix well into a paste. Add 1 tsp minced/grated ginger and stir for a couple of minutes until fragrant. Add in can of coconut milk and stir to deglaze the bottom of the pan.  Add 1/2 cup chicken stock, bay leaves and 1 tbsp of tamari. Stir through. Let simmer for about 5 minutes so the flavours develop.  Add Bok choy to the sauce and cover with a lid to steam the Bok choy for a few minutes while you plate up the rice and slice the chicken thigh.  Serve the sauce over the rice, chicken and boy choy. Sprinkle with chopped spring onion and chilli flakes.
