tipping is for the experience given. a great way to tip in Japan would be giving them the tip while saying "this is a token of my appreciation, you have shown exquisite hospitality, and this is for you giving me a great experience...." that way the tipping doesn't become customary and later on a part of the wage like it is here in the states.

coming from overseas, it would be memorable to me too, as I cook most of my food on vacation or buy it from convenience stores. Special dinners are memorable to me. If it meant a lot to the staff, it would mean a lot to me, as well.
