Easy 9/10 from me and the Mrs Crunchy outside Cheesy on top Juicy taco filling inside And they’re actually pretty decent on calories too 👀 Here’s what you need: Makes 10 ✅ 900g chicken thighs ✅ 10 mini tortillas ✅ 1 pepper ✅ 1 onion ✅ 1 tin black beans (240g drained) ✅ 100g sweetcorn ✅ 1 packet taco seasoning ✅ 100g mozzarella cheese ✅ Garlic powder ✅ Salt & pepper ✅ Spray oil Optional toppings because we’re fancy now: ✅ 0% Greek yoghurt ✅ Salsa ✅ Coriander Method 👇 1. Slice your chicken thighs into thin strips and season with 2/3 of the taco seasoning, garlic powder, salt and pepper. 2. Fry the chicken until cooked through and slightly crispy. 3. Dice your onion and pepper and fry them in the same pan. 4. Add the sweetcorn and black beans, then chuck in the rest of the taco seasoning. 5. Add the chicken back in and mix everything together. 6. Spray one side of each mini tortilla with oil (not actually sun cream) 7. Fill each tortilla with the taco mix, fold in half and stack upright in a baking dish. 8. Sprinkle each taco with mozzarella. 9. Bake at 180°C for 12 to 15 mins until golden and crispy. 10. Top with Greek yoghurt, salsa and coriander.
