Many times, we romanticise what we want our businesses to ultimately look like, and in doing so, we get stuck waiting for the “perfect” setup. The notion of starting where you are, with what you have, is a principle I’ve lived by for as long as I can remember. I started with a four-plate gas stove in my home. I applied for my COA back then, worked within the regulations, built my clientele and kept growing. Eventually, I became big enough to rent premises, and from there, I moved into a production kitchen. Entrepreneurship is not easy. But I believe we must allow funding and aid to find us working. Don’t wait for funding to start building the business you dream about. Find innovative ways to solve the problems in front of you. Find compliant ways to execute. Start small, save where you can, build your profile, document your work and let your track record speak for you. This response was in answer to a question we received about funding a training kitchen. Since I did not ask for permission to share the full clip, I’m only sharing the portion where I respond to the question. Sometimes, the biggest investment you can make in your business is simply starting. Start where you are. Use what you have. Do what you can. Keep building. The resources may come later — but let them find you already in motion.
