Guys, It is not the damn water. 52% to 54% hydration, 14% high gluten unbleached, unbromated flour, If your flour does not have enzymes, add diastatic malt at 1%. If your flour does not have ascorbic acid, add .003%. This helps with oven spring. FYI...King Arthur Sir Lancelot has amylase enzymes and their bread flour has ascorbic acid. Cold proof for 24 to 48 hours. Don't add baking soda....unless you like the bagels to taste like pretzels. I have been making bagels for years and have tried everything. I am a culinary educator. But....in conclusion....make what you like.

cold fermentation, at least 24hrs (up to 36hrs), ideally. The cold fermentation is what gives the bagels that beautiful crust with the little bubbles, and that signature chewy texture.

My hydration was way too high somehow. Should have known with how it came off the hook. It was workable until the final 20 min rise and then it was waayyyy too soft and stuck to the parchment
