Stick around if you like real dinners that don’t ask much of you 🫡 Dumb Dinners, Episode 36: Creamy Street Corn Chicken Folded Tacos What you need: 2 cups shredded rotisserie chicken 1 cup canned fire-roasted corn, drained and patted dry 4 oz cream cheese, softened 5 tbsp sour cream ½ cup shredded Mexican cheese ½ cup low-moisture shredded mozzarella 1.5 tbsp taco seasoning ½ tsp garlic powder 1 tsp Tajín, plus more to finish juice of 1 lime 4 oz canned diced green chiles, drained 12 street-taco flour tortillas oil for brushing extra shredded cheese for sprinkling inside cotija and chopped cilantro to finish How to make it: Heat oven to 400° and lightly grease a 9x13 dish In one bowl, stir the chicken, corn, cream cheese, sour cream, both cheeses, taco seasoning, garlic powder, Tajín, lime juice, and green chiles together until creamy Brush one side of each tortilla with oil, flip oiled-side down, add about 3 tbsp filling and a pinch of cheese, fold into a half-moon Pack them snug in the dish so they hold their fold (I used a little bowl to keep them standing up!)
