Melt butter + chocolate together. 2. Stir in sugars. 3. Mix in eggs. 4. Add cocoa, flour, espresso powder + salt. 5. Pour into lined 10-inch springform tin. 6. Bake 170°C fan for 20–25 mins (slightly underbaked). 7. Cool completely and press Oreos into the base  Cheesecake 1. Beat cream cheese + mascarpone until smooth. 2. Add sugar, cornflour + salt. 3. Mix in eggs + yolks. 4. Add cream + vanilla. 5. Pour over Oreos. 6. Wrap tin in foil + place in water bath. 7. Bake 150°C fan for 1h–1h 20 until set at edges, wobbly centre.  Cookie dough 1. Mix melted butter + sugars. 2. Add egg, yolk + vanilla. 3. Mix in flour, bicarbonate + salt. 4. Fold in chocolate chunks. 5. Press into disc + freeze until firm. Finish bake 1. Add frozen cookie dough disc on top of cheesecake. 2. Bake 160°C fan for 20 mins until golden and just set 3. Let the cheesecake to cool in the oven with the oven door open  4. Set fully in the fridge overnight  #cheesecake
