A quick, budget-friendly Thai-inspired one-pot dish combining fragrant jasmine rice with a flavorful chicken coconut curry. Ingredients: - 1 cup jasmine rice - 2 cups chicken broth - 1 tablespoon vegetable oil - 1 pound chicken breast, cut into bite-sized pieces - 1 red bell pepper, sliced - 1 green bell pepper, sliced - 1 can (13.5 oz) coconut milk - 2 tablespoons Thai red curry paste - 2 teaspoons soy sauce - 1 teaspoon sugar - Fresh basil leaves for garnish (optional) - Salt to taste Instructions: 1. Rinse the jasmine rice under cold water until the water runs clear. 2. In a large pot, combine rice and chicken broth. Bring to a boil over high heat. 3. Reduce heat to low, cover, and simmer for about 10 minutes, or until the rice is tender and liquid is absorbed. 4. Meanwhile, heat vegetable oil in a large skillet or the same pot over medium-high heat. 5. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. 6. Add sliced bell peppers to the skillet and cook for another 3-4 minutes until slightly softened. 7. Stir in Thai red curry paste and cook for 1 minute until fragrant. 8. Pour in coconut milk, soy sauce, and sugar. Stir well to combine. 9. Let the curry simmer for 5 minutes to meld flavors. 10. Taste and adjust salt or soy sauce as needed. 11. Serve the curry over the cooked jasmine rice, garnished with fresh basil if desired. #Recipe #cooking #foodtiktok #homemade #EasyRecipes #DinnerIdeas #mealprep Save this for later!
