Sticky Toffee Pudding Ingredients: Cake: 4 large dates, pitted ¾ cup milk 2 ½ tbsp unsalted butter, melted ¼ cup brown sugar 1 medium egg 2 tsp molasses ¾ tsp vanilla extract ½ cup flour (I used gluten-free) ½ tsp baking powder ¼ tsp baking soda Pinch of salt Vanilla ice cream, for serving Toffee Sauce: ¼ cup brown sugar 2 tbsp water ¼ cup heavy cream, warm Directions: In a pan on medium low heat, combine the water and brown sugar on a saucepan One browned and bubbling, add in the heavy cream, then combine and remove from the heat Preheat the oven to 350 F For the Cake: In a pan on medium heat, combine the milk and dates; let simmer for 10 minutes Let cool, then blend until smooth In a bowl, whisk together the butter, sugar, egg, molasses, vanilla extract, and date mixture Add in the flour, baking powder, baking soda, and salt, then whisk to combine Pour the batter into two 4-inch cake tins, then bake for 20-25 minutes, until a toothpick inserted into the center comes out dry Let cool for 5-10 minutes, then remove from the cupcake in, flatten the top, then place upside down onto a plate Top with ice cream, then pour the rest of the toffee sauce on top Enjoy!! #stickytoffeepudding #toffee #viralfoods #foodtrends - @awriterwholikesfood
