Cellulose is from plant fibres like wood pulp , while I also avoid it … it’s not plastic, it’s completely food safe but will make a sauce grainy.

Parmiggiano reggiano is imported straight from Italy, and Parmesan is made in the US! Basically just a knock off of the Italian cheese. More expensive, but so much better!
