PSTTT watch the next video for topping prep & how I made the saté 😝 Bun Bo hue broth  - Lemongrass - Flank steak   - Parboiled beef bones  - Daikon  - Ginger - Garlic - Shallot - Yellow onion - Pineapple  - Water  - Salt - Chicken bouillon  - Fish sauce  - Shrimp paste  - Saté Put slightly smashed lemongrass, flank steak, beef bones (parboiled for 5–10 minutes to clean), daikon, lightly toasted ginger, garlic, shallot, yellow onion, and pineapple in a large stock pot and fill with water. Bring to a boil, then reduce to a simmer and cook for about 1 hour, continuously skimming the top as scum rises. After an hour, remove the flank steak and add more water if needed to refill the pot. Continue simmering for an additional 7 hours, then strain the broth (I usually keep the daikon since I like eating it in my bowls, but this is optional). Return the broth to the pot and add a bit more water if needed, then season with salt, chicken bouillon, fish sauce, shrimp paste, and saté. Taste and adjust to your preference, adding a little sugar if the pineapple wasn’t very sweet. Serve the broth over thick vermicelli noodles with your favorite toppings and enjoy.
