@chefalexmihoc: Beef Tartare Toast 🥩 Buttery toasted brioche, hand-cut beef tartare, silky parsley mayo and iced green onions for the perfect fresh crunch. Ingredients: - Brioche bread - Butter - Beef filet - Shallot - Chives - Capers - Cornichons - Parmesan - Salt & black pepper Parsley Mayo: - 1 egg yolk - 1 tbsp mustard - Pinch of salt - Parsley oil Method: Toast the brioche in butter until deeply golden and crispy on both sides. Hand-cut the beef into small cubes. Finely dice the shallot, chop the chives, capers and cornichons, then combine everything with parmesan, salt and black pepper. For the parsley mayo, whisk together the egg yolk, mustard and salt, then slowly emulsify with parsley oil until smooth and glossy. Thinly slice the green onion tops into ultra fine strips and place them in iced water until they curl and become light and airy. To assemble: Top the toasted brioche with the beef tartare, pipe over the parsley mayo and finish with the iced green onions.
