@jabshe_boy_10: *1. Chicken Curry*
*Ingredients*:
- 6-8 ๐ chicken drumsticks/thighs, skin on
- 3 ๐ง
medium onions, thinly sliced + 1ยฝ tbsp ๐ง ginger-garlic paste
- 3 ๐
ripe tomatoes, pureed OR 4 tbsp ๐
tomato paste + ยพ cup ๐ง water
- ยฝ cup ๐ฅ plain yoghurt/mala, whisked
- *Whole spices*: 2 ๐ฟ bay leaves + 1" ๐ฟ cinnamon + 3 ๐ฟ cardamom + 4 ๐ฟ cloves
- *Ground spices*: 2 tsp ๐ถ๏ธ Kashmiri chili - _for color_ + 1 tsp ๐ถ๏ธ regular chili + 2ยฝ tsp ๐ฟ coriander powder + 1ยฝ tsp ๐ฟ cumin powder + ยฝ tsp ๐ฟ turmeric + 1 tsp ๐ฟ garam masala + ๐ง salt
- 5 tbsp ๐ง oil or ghee
- ๐ฟ dhania, chopped for garnish
*Method*:
1. *Marinate*: Score ๐ chicken. Mix ยฝ ๐ฅ yoghurt + ยฝ tbsp ๐ง ginger-garlic + 1 tsp ๐ถ๏ธ chili + ยฝ tsp ๐ฟ turmeric + ๐ง salt. Rub on chicken, rest 30 mins - 2 hrs.
2. *Bhuna base*: Hot ๐ง oil, add *whole spices* 30 sec. Add ๐ง
onions, fry 15 mins low-medium till deep golden brown. _Dark onions = dark gravy_. Add remaining ๐ง ginger-garlic, 1 min.
3. *Masala*: Add all *ground spices* except garam masala, fry 45 sec. Add ๐
tomato puree/paste. Cook 12-15 mins medium till thick, pasty, and oil separates on sides.
4. *Cook chicken*: Add marinated ๐ chicken, bhuna/fry 6-7 mins till coated + seared. Add 1 cup ๐ง hot water. Cover, simmer 25-30 mins till tender + gravy thick.
5. *Final*: Uncover last 5 mins to thicken. Gravy should cling to chicken + leave red oil around edges. Stir in ๐ฟ garam masala + ๐ฟ dhania. Rest 5 mins.
*2. Basmati Rice* - _the fluffy white base_
- 1ยฝ cups ๐ basmati, washed + soaked 30 mins
- 2ยผ cups ๐ง water + 1 tsp ๐ง salt + 1 tsp ๐ง ghee + 2 ๐ฟ cloves
- *Method*: Boil ๐ง water + ๐ง salt + ๐ฟ cloves + ๐ง ghee. Drain ๐ rice, add. Boil 2 mins, then lowest heat 12 mins covered. Rest 10 mins off heat. Fluff with fork.
*3. Kachumber Salad* - _the fresh side_
- 4 ๐ฅ cucumber slices
- 1 ๐
tomato slice + 3 ๐ง
red onion wedges + 1 ๐ถ๏ธ whole green chili
- *Serve*: Raw, arranged on side. Sprinkle ๐ง salt + ๐ฟ lemon squeeze if you want.
