@dana_conway: It’s always the ones that leave a mess that taste the best😈 Welcome back to “Single, but cooking like someone’s falling for me tonight.” Who’s hungry?👀 Fillet-O-Fish 🎣 Brioche • 500g strong white flour, • 1½ tsp salt, • 40g sugar, • 1 sachet yeast • 3 eggs, • 120ml milk • 100g soft butter • 1 egg + splash milk (wash) Fish • 4 cod fillets (120–150g) • 120g plain flour • 40g cornflour, • 1 tsp baking powder • ½ tsp bicarb • 200ml cold lager • Oil for frying Seasoning: 1 tsp salt, ½ tsp white pepper, ½ tsp garlic powder, ½ tsp onion powder, zest ½ lemon Tartar • 150g mayo • 2 tbsp cornichons, 1 tbsp capers, 1 small shallot • 1 tbsp parsley, 1 tsp Dijon, 1 tsp lemon juice • ½ tsp Worcestershire, pinch white pepper, pinch sugar Method 1. Mix dough, knead smooth, add butter gradually, knead until elastic. Rise until doubled. 2. Divide 6, shape tight, prove until puffy. Egg wash, bake 180°C fan 16–18 mins. Cool. 3. Mix tartar. Balance with extra mayo/lemon if needed. Chill. 4. Season fish, rest 10 mins. 5. Mix dry batter, whisk in beer to thick consistency. 6. Heat oil to 180°C. 7. Dust fish, dip, fry 4–5 mins until golden and crisp. Drain on rack. 8. Toast buns. 9. Build: tartar, fish, more tartar. #plentyoffishinthesea
