Prepare the salsa     Combine all salsa ingredients in a bowl, mix well, and leave aside. 2. Make the chipotle sauce     Stir together all sauce ingredients until creamy and smooth. Chill until serving. 3. Cook the beef     Heat a pan with a little oil over medium-high heat. Add the beef and leave it for 2–3 minutes to brown before breaking it apart. Add onion and cook for 3 minutes. Mix in garlic, tomato paste, chipotle paste, spices, seasoning, and chilli flakes. Cook for 1 minute, then add Worcestershire sauce if using. Continue cooking until the filling becomes rich and slightly dry. Stir through lime juice at the end. 4. Build the tacos     Warm a lightly oiled pan over medium heat. Place in a tortilla and add a thin layer of cheese, followed by the beef, then another sprinkle of cheese. Fold the tortilla and gently press down. Cook for 2–3 minutes on each side until crisp and golden. Repeat. 5. Serve     Finish the tacos with fresh salsa, chipotle sauce, and any optional toppings. Enjoy straight away for the best crispy texture.
