My 1st attempt at gravlax resulted in the best cured salmon I’ve ever tasted, ALMOST perfect 😋 (so close, but not quite)! Salmon is such a good form of protein, I love it cooked, I especially love it raw, cured, smoked, literally in every form, so the thought of preserving it and having it readily available to eat makes my greedy heart skip a beat 🙃. For my first cure, I used: •Salmon (obviously) •Salt •Sugar •Pepper •Lemon zest •Thyme •Dill It doesn’t have to be perfectly measured but I did my research and found that the standard amount of salt should be ~15% of the weight of the salmon. My salmon was a little over a pound so I used ~95g of salt, half the amount of sugar. I ended up letting her cure for ~48 hours and it wasn’t too firm but it was super salty, so next time I think I’ll do equal parts salt and sugar. I’ll also let the salmon soak a bit after so it’s a little less salty.
