@courtcooksatl: Bulk fermentation gets so much easier when you can actually SEE the rise. Put a small piece of dough in a 2 oz glass measuring cup up to the 1 oz line, then watch it rise alongside your main dough. Now you can clearly see when your dough has risen 50%, 75%, 100%, or whatever your recipe calls for. It’s the easiest little sourdough hack for beginners. I’ve been doing this aliquot method but I just saw another creator take a pinch and put it in a glass of room temp water and wait for it to float and apparently that works perfect. Seemed like a simpler method just wanted to share
