Sri Lankan Chicken Palandi My husband suddenly craved his favourite Chicken Palandi from Pillawoos in Sri Lanka, so I made it at home. He was so excited to eat it that he couldn’t even wait for me to film it.😄 Chicken Palandi is a rich, creamy, and spicy Sri Lankan comfort dish made with fried chicken pieces, onions, tomatoes, curry leaves, aromatic spices, yoghurt, milk, scrambled eggs, and finished with cheese. It’s delicious served with paratha or even used to make a flavourful chicken kottu. Ingredients For the chicken 1 kg chicken pieces of your choice (small pieces or larger leg pieces) For the Palandi 2 tbsp oil 2 large onions, sliced 2 tbsp ginger garlic paste A handful of curry leaves 2 pieces rampe (pandan leaf) 3–4 green chillies, sliced ½ tbsp chilli powder ½ tsp turmeric powder 2 tsp pepper powder 1 tsp salt (or to taste) 1–2 tbsp chilli flakes 1 tomato, sliced 2 banana capsicums, sliced 3 eggs, beaten 1 cup curd (unsweetened yogurt)  1 cup milk ½–1 cup grated cheese Method Marinate the chicken with your favourite spices and let it rest for 30 minutes to 1 hour. Fry or grill the marinated chicken until cooked. If using larger leg pieces, cut or pull the chicken into smaller pieces after cooking. Keep aside. Heat oil in a pan. Add sliced onions, ginger garlic paste, curry leaves, rampe, and green chillies. Sauté until the onions become soft and the raw smell disappears. Add chilli powder, turmeric powder, pepper powder, salt, and chilli flakes. Mix well and cook until the spices become fragrant. Add the sliced tomato and banana capsicum. Cook until slightly softened. Add the cooked chicken pieces and mix well, allowing the chicken to absorb the flavours. Add the beaten eggs and leave for a few seconds, then mix everything together. Add the curd and mix well. Pour in the milk and add the grated cheese. Stir until everything becomes creamy and well combined. Cover and cook on low heat for a few minutes.
