Creamy Cheesy Enchilada Suizas for you to make at home. Rich, velvety, loaded with cheese and packed with flavor. Full Recipe  Ingredientes: 1 rotisserie chicken, shredded (about 3-4 cups) 1/2 cup queso fresco, shredded 1 tsp olive oil 6 tomatillos, husked and rinsed 3 jalapeños, stemmed (adjust for spice preference) 1/4 yellow onion, roughly chopped 6 garlic clove 1 extra-large poblano pepper (or 2 regular-sized) 1 cup water 1 tbsp kosher salt (to taste) 2 oz cream cheese 1 bunch cilantro  1/2 cup sour cream 12-16 corn tortillas 1 cup mozzarella cheese, shredded (for topping) Pickled Red Onions to garnish  Directions: Suiza Sauce In a large searing pan, set to high heat. Add 1 tsp olive oil, add the tomatillos, jalapeños, poblano pepper, garlic cloves, and yellow onion. Sear, turning occasionally, for 5 - 7 minutes, until the vegetables are charred. Add 1 cup water, cover and simmer for 5min.  Transfer to a blender, add cream cheese and blend until smooth. Add salt to taste. Transfer to a bowl. Add 1/2 cup sour cream and whisk. Set aside.  Prepare the Filling: In a large bowl, combine the shredded rotisserie chicken, 1/2 cup of the suiza sauce, and 1/2 cup shredded queso fresco. Mix well. Assemble the Enchiladas: Spread about 1/2 cup of the Suiza sauce on the bottom of a baking dish. Place 2-3 tablespoons of the chicken filling in the center of each tortilla. Roll tightly and place seam-side down in the baking dish. Repeat until the dish is filled (you should fit 12-16 enchiladas, depending on size). Pour the remaining Suiza sauce evenly over the rolled tortillas, ensuring they are fully coated. Sprinkle 1 1/2 cups shredded mozzarella cheese evenly over the top. Broil the Enchiladas: Preheat your oven’s broiler to high. Place the baking dish under the broiler (about 6 inches from the heat source) broil for 3-5 minutes, or until the mozzarella cheese is melted, bubbly, and golden brown in spots. Watch closely to prevent burning.  If the enchiladas are not warmed through, you can bake them at 375°F (190°C) for 10-12 minutes before broiling to ensure the filling is hot.
