The secret to getting that classic gooey toast is using raw, unfiltered creamed honey and cooking the syrup to 240°F What you’ll need: • 1 cup filtered water, divided • 3 scoops (or 3 tbsp) grass-fed beef gelatin • 1 cup raw, unfiltered creamed honey • 1/4 tsp ground vanilla beans (or 2 vanilla beans) • Tapioca flour, for dusting How to make: 1. In a large bowl, bloom the gelatin in 1/2 cup water. 2. In a saucepan, combine the remaining 1/2 cup water, honey, and vanilla. Stir over medium heat until the honey dissolves. 3. Simmer over medium-high heat for about 10 mins, whisking often until bubbly and slightly darker in color. The syrup should reach 240°F (use candy/deep fry thermometer) 4. Slowly pour the hot syrup into the bloomed gelatin while mixing and stir until fully dissolved. 5. Beat with a mixer at high speed for about 10 mins until thick, white, and fluffy. 6. Pour into a parchment-lined dish dusted with tapioca flour and ground vanilla beans (optional). Smooth the top and tap the dish to level. 7. Sprinkle more vanilla (optional) and tapioca flour on top. 8. Cover and let sit at room temperature overnight (don’t refrigerate). 9. Cut into squares the next day and enjoy!
