Add in your egg, salt, bread flour and give it a nice mix. Then use your hands to form a dough ball. Add in the butter and mix it well. Keep kneading until a soft dough forms.  Place in a bowl and cover in warm environment and let it double the size. ( about an hour!) While that rests, make the custard!
In a bowl: add in the egg yolk, sugar and flour. Whisk until it gets creamy and slightly runny.  Then add in warm milk in 3-4 increments. Whisk well.  Then pour the mixture into a saucepan and turn the stove on. On medium low heat. Whisk until the mixture gets a little thick. Add in your butter and whisk well again. It should be thick and custard like. Pour the custard into a pan and cool! (Transfer the custard into the piping bag later) Back to the dough: Then get your dough and knead for a minute. Cut into 8 pieces and roll it into a ball.  Cover again for 30 min until it rises a little.  Then take out the balls again and dimple with your fingers then roll it into a ball again and cover for 30 minutes.  After the dough rises add to the low- medium heat pan and fry your doughnuts. The outside should be nice and light brown. Turns fast in color so make sure to keep it on low heat! After it cools add in a small hole and fill it with the custard. After that make the  hard shell. Add in 100g of sugar and 50g of water into a sauce pan. Let it simmer until the color turns brown.
