To brew Longjing (Dragon Well) tea properly, follow these steps:
1. Water temperature: 75–85°C (165–185°F). Avoid boiling water, as it will scorch the delicate leaves and ruin the aroma.
2. Tea amount: Use about 2–3 grams of tea leaves per 150–200 ml (5–7 oz) of water.
3. Preheat the teapot/glass: Rinse your glass or teapot with warm water to maintain temperature.
4. Rinse (optional): For high-quality Longjing, you can skip rinsing. If you rinse, use 80°C water and pour out quickly.
5. Brewing method:
· Add tea leaves into the glass or teapot.
· Pour hot water along the inner wall of the glass (not directly onto leaves) to let them gently unfurl.
· Fill about 1/3 full, let steep for 20 seconds, then add more water to 2/3 or full.
6. Steeping time: First infusion – 1–2 minutes. Adjust according to taste – shorter for lighter flavor, longer for stronger.
7. Re-brewing: Longjing can be steeped 3–4 times. Increase water temperature slightly and extend steeping time for later infusions.
8. Serving: Pour all the tea out (do not let leaves soak continuously) and enjoy its fresh, nutty, and slightly sweet taste.
