@alina.homecook: There are some dishes that don’t just feed you, they take you somewhere. This Wedding Kalyo instantly takes me back to those busy wedding halls, the sound of chatter in the background, and huge trays of this rich lamb curry being carried through the room. Served with soft bread or flaky parathas, this was the dish people looked forward to most. The deep spices, the tender lamb, the glossy gravy soaked up with warm bread, it tasted like celebration, comfort and family all in one. One bite and I’m back at those wedding tables again. Start by heating 1 cup of oil in a large pan and frying 6 finely sliced onions until deeply golden brown. Remove them from the oil, drain on kitchen towel and set aside for later -these onions are what give the kalyo its signature depth and richness. Turn the heat off briefly so the hot oil doesn’t burn the spices. Into the same oil, add 4 green cardamoms, 2 black cardamoms, 1 cinnamon stick snapped in half, a pinch of black peppercorns, 2 tablespoons dried red chillies (around 16–17), 4 dried bay leaves and 1 teaspoon cloves. Let the spices bloom for a few seconds before turning the heat back on high. Add 1.5kg lamb shoulder cut into cubes and trust me, quality matters here. Let the lamb brown properly for around 5 minutes so it develops colour and flavour. Lower the heat slightly and add 3 frozen ginger garlic cubes, stirring until they melt into the meat and become fragrant. Next, stir through 6 tablespoons thick yogurt followed by 3 tablespoons tomato purée. Once fully combined, season with 2 tablespoons Kashmiri chilli powder, ¼ teaspoon turmeric, 1 tablespoon cumin powder, 2 tablespoons coriander powder, 1 tablespoon salt and 1 tablespoon ground black pepper. I didn’t add extra heat the first time and regretted it, so I’d definitely recommend adding 1 tablespoon chilli flakes or some fresh chillies too. Mix everything really well. Mine had enough liquid naturally, but if yours starts drying out before the meat is tender, add small splashes of boiled water as needed. Stir the fried onions back in, lower the heat completely and leave the kalyo to cook gently for around 3 hours. Mine sat on the smallest ring on low the whole time. Just keep an eye on it and stir occasionally so nothing catches at the bottom. By the end, the lamb should be incredibly soft and the gravy rich, glossy and deeply spiced.
