@broccyourbody: I can promise that you won’t find another 15 minute recipe that tastes this damn good 🔥 Serves: 4 Ingredients: 1 lb shrimp, peeled and deveined 2 tablespoons coconut oil 1 shallot, diced 1 bell pepper, diced 2 handfuls baby spinach, roughly chopped 2 cloves garlic, grated or minced 1 tablespoon freshly grated ginger 1 13.5 oz can full fat coconut milk Juice from 2 limes 1 teaspoon turmeric 1/4 teaspoon red chili flakes, optional 1/4 cup fresh cilantro, chopped (for serving) Steamed rice for serving Instructions: Heat the coconut oil in a large, deep skillet over medium high heat. Add the shrimp and season with a pinch of kosher salt and pepper. After 2 minutes, flip, lightly season with salt and pepper on the other side, and cook for another minute or two until the shrimp has cooked through. Remove from the pan and set aside. In the same pan, reduce heat to medium and add more coconut oil if needed. Add in the shallot, bell pepper, garlic, and ginger. Cook, stirring constantly, until fragrant, about 5 minutes. Add the spinach and stir until wilted, about 1 minute. Add the coconut milk, lime juice, turmeric, chili flakes, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. Stir to combine and bring to a simmer over medium heat. Add the cooked shrimp back in and simmer for about 5 minutes until the shrimp is heated through.
