Ingredients * 3 medium eggplants (aubergines) * 1 small onion, diced * 1 red bell pepper, diced * 2 cloves garlic, minced * 2 tomatoes, diced * 3 tbsp olive oil * 2 tbsp lemon juice * 2 tbsp chopped parsley * Salt, to taste * Black pepper, to taste * Optional: chili flakes or paprika Instructions 1. Roast the eggplants Roast whole eggplants in the oven at 425°F (220°C) for 30–40 minutes until soft and charred. Let cool, peel the skin, and chop the flesh. 2. Cook the vegetables Heat olive oil in a pan. Add onion and bell pepper, cook for 4–5 minutes until soft. Stir in garlic and tomatoes. 3. Add eggplant Mix in the chopped roasted eggplant. Season with salt, black pepper, and chili flakes if using. 4. Finish the salad Cook for another 5–7 minutes, then remove from heat. Stir in lemon juice and parsley. 5. Serve Serve warm or cold with fresh bread, grilled meat, or as a mezze side dish.
