There’s just something about Sundays and a good beef pot roast. And I think this might be my favorite one I’ve ever made. The beef is fall-apart tender, the potatoes soak up all that rich gravy, and it’s good. Beef Pot Roast Ingredients For the roast: • 3 lb chuck roast • 1½ tsp salt • 1 tsp Montreal steak seasoning • ½ tsp black pepper • 1 tbsp oil For the pot roast: • 2 tbsp butter • 1 large onion, diced • 5 garlic cloves • 1½ tsp brown sugar • 1 tsp salt, or to taste • ¼ tsp black pepper • 2 tbsp tomato paste • 2 tbsp all-purpose flour • 4 cups beef broth • 3 large carrots, cut into thick pieces • 2 lbs baby potatoes • 4 sprigs fresh oregano • 2 sprigs fresh rosemary • 4 sprigs fresh thyme • 2 fresh bay leaves Directions 1. Preheat oven to 350°F. Season chuck roast with salt, Montreal seasoning and black pepper. 2. Heat oil in a Dutch oven or oven-safe pan. Sear roast for about 5 minutes per side, then remove and set aside. 3. Add butter and onion to the same pan and cook for 5 minutes. Add garlic and cook for 30 seconds. Season with brown sugar, salt and black pepper. 4. Add tomato paste and cook for 2 minutes. Stir in flour and cook for another 2 minutes. Slowly pour in beef broth while stirring. Bring to a simmer and season to taste. 5. Add half the carrots to the bottom, then return the roast to the pan. Arrange the remaining carrots and baby potatoes around the roast. Add oregano, rosemary, thyme and bay leaves. 6. Cover and bake for 3 hours, or until the beef is fall-apart tender.
