i haven’t had the egg ick in a while (touch wood) i love them 💕💕💕 (2x small portions) you’ll need: - 4 eggs  - 1 small (or 1/2 a large) red onion - 2tbsp green pesto  - 2tbsp mayonnaise  - 2tbsp full fat greek yogurt - salt & pepper to taste  - 1tsp dried chilli flakes  (to serve) - sourdough bread (toasted / untoasted) - fresh tomato, sliced  - olive oil  - sea salt flakes method: 1. begin by placing your eggs in a small sauce pan and filling with cold water until they are completely submerged. 2. place the pan on a high heat until boiling. once boiling, lower the heat so the eggs are just quietly simmering and set the timer for 8 minutes. 3. whilst they are boiling, finely chop the red onion. 4. once the eggs have boiled, drain the water and filling the pan back up with very cold water (or place the eggs in an ice bath).  5. let them sit for a few minutes whilst you grab the rest of the ingredients. 6. carefully peel the shell from eggs and place them in a medium sized bowl. 7. using a fork, roughly mash the eggs (not too finely, you want some texture!).  8. add in the pesto, red onion, mayonnaise, greek yogurt, salt, pepper and chilli flakes. 9. mix until thoroughly combined. 10. slice your sourdough and toast or leave untoasted (whatever you prefer!) and carefully spoon the egg mixture right on top. 11. layer with slices of fresh tomato and a sprinkle of sea salt. 12. finish with a drizzle of olive oil for an extra touch hehe… enjoy xxx🥚🍅 #eggs #egg #lunch #lunchideas #yogurt
