🍞 Sourdough French Bread (Francala Style) We’re making a classic sourdough French bread, also known as francala – light crust, soft crumb, and naturally fermented. Let’s get baking! ⸻ 🧾 Ingredients: • 350 g bread flour (for sourdough) • 100 g whole wheat flour • 50 g rye flour • 80 g active sourdough starter • 335 g cold water (add gradually, as needed) • 10 g salt ⸻ 👩🍳 Instructions: 1. Mix the flours, sourdough starter, and water until no dry flour remains. Let rest for 1 hour (autolyse). 2. Add salt (dissolved in a bit of water) and knead for about 4–5 minutes until fully combined. 3. Perform 3 stretch & folds every 30–40 minutes. Tip: If your kitchen is warm, you can refrigerate the dough between folds. 4. Once the dough has risen and gained volume, place it in the fridge overnight. 5. The next morning, divide the dough into 2 pieces, let them rest for 30 minutes at room temperature. 6. Shape as shown in the video (into batards), and place on a baking tray or cloth. 7. Once proofed, score the top and bake at 220°C (430°F) with steam for 20–25 minutes, until golden and crisp. ⸻ ✨ Don’t forget to watch the video till the end to see the crumb!
