Let’s find out! ⸻ 🍉 Episode 6: Watermelon / Fake Tuna (2 servings) Ingredients • 1/2 watermelon • 4 green asparagus • 50ml soy sauce • 50ml rice wine vinegar • 25ml sesame oil • 2 tsp sesame seeds • 1 chili pepper, chopped • 1 lime • 2 tbsp salmon roe for garnish Coconut Vinaigrette • 300ml coconut milk • 1 garlic clove • 1cm ginger • 1 tbsp rice wine vinegar • 1 tsp Dijon mustard • 1 tbsp extra virgin olive oil • 1 lime • 1 tbsp honey • Pinch of salt • Green herb oil (mix just before plating) ⸻ Recipe 1️⃣ Cut the watermelon into “steaks” about 2cm thick and marinate them in soy sauce, rice wine vinegar and sesame oil for 3 hours. 2️⃣ After marinating, bake them at 150 degrees Celsius for 2 hours. Check occasionally so they don’t burn. The longer they bake, the drier and more tuna-like the texture becomes. 3️⃣ Let them cool down and cut the watermelon into cubes. Drain in a sieve so they become as dry as possible. 4️⃣ Add the cubes to a bowl together with the chopped chili pepper, sesame seeds and 1 tbsp of the marinating liquid. Mix and set aside. 5️⃣ Slice the asparagus as thinly as possible using a peeler. Dress with olive oil, salt and the juice & zest of 1/2 lime. Mix and set aside. 6️⃣ For the coconut vinaigrette, blend all the ingredients until smooth and strain through a fine mesh sieve. 7️⃣ Right before plating, add the green herb oil to the vinaigrette without mixing it so it stays split. (Message me if you want the herb oil recipe — it’s very easy 😄) 8️⃣ Plate the watermelon tartare in the middle of the plate. Add the asparagus ribbons and garnish with 1 tbsp salmon roe. Pour the vinaigrette table side for the full WOW-effect! 🍉✨ ⸻ This tasted so amazing guys! The texture was actually a bit like tuna while still tasting sweet like watermelon.
