The controversy of using grocery store cake mix is that all Box Cake brands use the exact same fundamental ingredients (from the exact same manufacturer) with HEAVY emulsifiers to puff up and extend shelf life. This is the signature “box cake” cheap taste/texture anyone can catch. If I’m paying a pro I don’t want it to take like I made it. 💀
