The original inhabitants of the island are the Arawaks (they’ve come up in other Caribbean history moments) and used barbecuing in their cooking! You can find the East Indian influence in the chutneys and curries of Trinbagonian food, and the African influence in the rice & peas, stewed veggies and one-pot stews of chicken, oxtail, and other meats!
