I live in Oklahoma- no golden ray, dasheen bush, and WORST of all- no pimentos. Cooking Trini food without pimentos is heart breaking! Sooo I do the best I could with just spinach 😬.

I’m assuming Pimento is easy to find in Florida. I’m in Washington DC and I can’t easily find it. The few places that have it … it’s an arm and a leg. I’m so envious!!!!it along with Shadon Beni is a corners stone of our cuisine.
