Honestly, you can visit Vietnam multiple times and still barely scratch the surface. Even locals here, when traveling to another part of the country, might not fully know the proper way to eat certain regional dishes. I’ve been to Huế many times and eaten cơm hến, baby clam rice, over and over again. But on my most recent trip, I noticed a couple of locals pouring the hot clam broth directly into the bowl at the end, completely changing the dish into a second experience. I had no idea. I always assumed the broth was just meant to be sipped on the side, like with so many other dry dishes in Vietnam. That’s what I love about eating here. You never really finish learning.
