on the subject of brown butter… wouldn’t the milk solids essentially “brown” over the course of the baking period? not convinced bb isn’t hype at this point (and an extra, unnecessary step). your og chewy recipe is good btw

I made cookies with browned butter and they were very crumbly. Tasted good but dry and fell apart. I assume it was because of the lack of water in the butter?

I always add a tablespoon of dried milk powder to my butter as it's browning. It's the same milk solids that are in your butter that you want to brown, so you get more browned butter flavor in your cookies.

could you use ghee instead of browned butter? Its made the same way but the solids are strained out, I know you said you want them but their flavour is in the ghee.
