How do you feel about Margaret Atwood? she loves writing post apocalyptic books. She has trilogy that's first book is Oryx and Crake, second is The Year of the Flood, and lastly MaddAdam. fun detail is they all are happening on the same timeline, just featuring different groups, so you can read them in any order. Highly recommend

Parable of the Sower is possibly the most realistic because institutions still exist, you still have to go to work, but the institutions don't work anymore. They don't know they are in a post apocalyptic world. feels very relevant to now.

You need to read A Tidy Armageddon by B.H Panhuyzen. Canadian fiction about a military troop who emerges from a bunker training to find that everything in the world has been organized into towers/cubes according to thing. So for instance there is a cube of all the tires in the world, a cube of toilets, a cube of cruise ships, a cube of nails, etc. It is really great and a really unconventional take!
