Curious did you use canned black beans? Some canned black beans have added ingredients which can affect sugar. Or did you use just dry beans?

Beans always spike me, but I’m diabetic. A bowl of chili will raise it significantly. I can get away with a small potato much more than beans. Which was a disappointing discovery for me because I really like them.

eating a food that mostly carbs, by itself, on an empty stomach will cause a blood sugar spike like 90% of the time, that's why we should combine complex carbs with healthy fats, protein and fiber

I've noticed BIG spikes when I add black beans to my ground beef and sweet potato meals. I'm a Type-1 Diabetic. My BG will shoot-up from around 100, to over 250. 😬

I boil pinto beans then sauté onion, garlic, and jalapeño... add the beans, mash them and put them in a corn tortilla with shredded lettuce, avocado, and pico de gallo. That accomplishes all of the good nutrients.
