Commenting to let people know leftover rice is fine, the whole scare was about leaving rice IN THE RICE COOKER FOR DAYS. RICE IS TOTALLY SAFE WHEN REFRIGERATED JUST LIKE ANYTHING ELSE.

She's basically making deconstructed unigiri, a very popular snack in Japan. We have little unigiri molds and my kids love making them at home, especially when I already have all the ingredients out for poke or sushi night.
