Preheat oven to 350°F (175°C). Spray donut pan. 2. Whisk dry ingredients. 3. Add wet ingredients; stir until smooth. 4. Pipe batter into wells, filling ¾ full. 5. Bake 10 min or until tops spring back. 6. Cool 3 min, then transfer to rack. Re-spray pan and repeat. 7. Mix yeast with warm milk; rest 5 min. 2. Combine flour, sugar, vanilla sugar, and salt. 3. Add milk-yeast mix and egg; mix gently. 4. After 3 min, add butter. Knead 10–15 min until smooth. 5. Cover and rise 1½ hours. 6. Punch down. Shape into 20g balls or roll to ⅜ inch (1cm) and cut. 7. Place on parchment; rise 1 hour. 8. Fry at 320°F (160°C) until golden, flipping once. 9. Coat in sugar or dust with powdered sugar. Optional: fill with jam or cream. 4️⃣ Mochi Donuts Ingredients • ½ cup silken tofu (120g) • 1 large egg • ¾ cup cake flour (100g) • ¼ cup sugar (50g) • ¾ cup glutinous rice flour (100g) • 1 tsp baking powder (4g) • Neutral oil for frying Steps 1. Mash and strain tofu. Mix with egg and sugar until smooth. 2. Sift in cake flour, glutinous rice flour, and baking powder. Knead into soft dough. 3. Roll into small balls (2 tsp / 6g). Arrange 8 balls in a ring on parchment. 4. Fry at 300°F (150°C) with the parchment attached. 5. Once the donut releases from the paper, remove it. Fry until golden. 6. Mix warm milk, sugar, and yeast. Rest 5 min. 2. Add flour and salt; knead into soft dough. Rest 20 min. 3. Knead in butter until smooth and stretchy (about 10 min). 4. Cover and rise 1 hour. 5. Punch down. Divide into 12 balls (~45g). Shape into rings. 6. Place on floured surface; rise 40 min. 7. Fry at 320°F (160°C) until golden on both sides. 8.
